afternoon tea

I first of all want to say a big thank you to everyone. Thank you for the wonderful kind comments yesterday, thank you for reading my blog, thank you for sharing your stories and lives with me. It really helps sometimes to know that you are not alone. You are bunch of wonderful women (are there any men reading this?) with wonderful hearts - thank you.

Biscuit anyone. (Afternoon tea girls - yours should be arriving today.)



Basic biscuit recipe from Stephanie Alexander.
  • cream 110g butter, 1/3 cup of raw sugar and 1/3 cup of caster sugar - until pale and fluffy.
  • add 1 egg and mix some more.
  • add 125g sifted flour (i usually add more than this to get a stiffer dough - a softer dough makes for a more buttery textured bicky) 1/2 teaspoon salt, 1/2 teaspoon bi-carb soda.
  • mix till it is a firm dough - add more flour if needed.
  • take teaspoon sized balls and flatten them slightly in the palm of your hand.
  • bake on baking paper for 12 mins at 175 C.







Variations for afternoon tea include: (sorry girls I meant to put this info into the packs but sealed them up before realising I hadn't done it.
  • green tea - add a teaspoon (or a bit more) of green tea powder to the mix
  • double chocolate - add a tablespoon of cocoa and a cup of dark choc chips
  • white choc and almond - add a cup of white chocolate chips and half a cup (or so) of almond flakes
  • custard and coconut - add a tablespoon of custard powder and half a cup of desicated coconut
  • can also add smarties or freckles pressed into the top for the kiddies

Mmmmmm, yummy yummy yummy! Mine haven't arrived yet, maybe they'll come with Mr Parcel Guy, he comes to our place late in the afternoon. If not they'll be here tomorrow.
I'm sure they won't last long at all!

A BIG THANK YOU! Mine have arrived and they are super fresh and delicious! We ate 4 pieces already. The chocolate ones are so good !! I had to put them away temporarily 'cos it's dinner time. I got will power.

i didn't read your post yesterday so would like to add my encouragment and postive thoughts a day late. i hope you are feeling a bit better. parenting is tough work even when your energy is up. my partner travels quite a lot--i totally sympathize.

The cookies looked great, however I would put a little more green tea powder in the mix. I would also suggest using a green tea powder blended for baking. Maybe something like this - baking matcha
